BioHiTech America is installing its commercial food waste disposal system at Golden Corral restaurants in 10 franchised locations throughout Florida, in a move the company says will divert food waste from landfill, help measure sustainability and identify dishes that do not sell.
BioHiTech’s on-site Eco-Safe Digester will allow the Golden Corral restaurants to dispose of food waste in the sewer system, while at the same time collecting data and providing real-time reports on the details of what exactly is being wasted. Golden Corral owner Taylor Levy says that categorizing and quantifying the food waste will help the company to measure its sustainability progress and reduce the volume of prepared dishes that do not sell in specific locations.
During the digestion process, the digester weighs each increment of waste and allows employees to categorize its type, simultaneously transmitting this real-time data to the BioHiTech Cloud. The visibility of the food waste data allows management to identify wasteful preparation and staffing, improve profitability and make important decisions regarding overall operations.
Privately held Golden Corral Corporation has almost 500 restaurants in 40 states – with 56 restaurants in the state of Florida alone.
BioHiTech announced earlier this month that it has partnered with Natural Systems Utilities to test a process that will allow BioHiTech’s the Eco-Safe Digester to digest, tank, and deliver the effluent from its Eco-Safe Digesters to anaerobic digestion (AD) facilities anywhere in the world. BioHiTech’s Eco-Safe Digester utilizes an aerobic digestion process to convert food waste to grey water, or effluent. Typically, as with the Golden Corral restaurants, the effluent is discharged safely into the sewage system and individual wastewater treatment facilities to treat it with other sanitary waste. This new process will tank the unit’s effluent allowing for transportation to an anaerobic digestion plant where biogas can be captured and used to create renewable energy.
